Les amateurs disent que ce fromage pourri marche tout seul, gr\u00e2ce \u00e0 ses asticots. Il ne reste qu&#8217;une p\u00e2te creus\u00e9e de petites galeries, dont la texture est devenue tr\u00e8s molle, et d&#8217;o\u00f9 s&#8217;\u00e9coule un liquide (appel\u00e9 lagrima, larme).
